Get a cauliflower. Chop it into pieces. Toss in spices of your choice and oil. Roast to within an each of its life.

Serve with some goats cheese mixed throughout. Maybe some parsley too.

Maybe chuck some almonds in three quarters of the way through the roasting. Or some chopped dates.

Serve with a meat of your choosing. Or by itself.

Got one that I think was a Jamie Oliver originally. Super quick and easy but tastes amazing.

Assuming you like asparagus. If not it’s not for you…,

Stick some linguine on to boil. Start to fry some garlic in a butter and oil mix, once it sizzles add the asparagus (sliced at a fancy angle). Soon as it starts to fry add a couple tablespoons of the pasta water and about a quarter a glass of white wine. Turn the heat right down and cover. Leave like that til the pasta is ready. Add Italian hard cheese (or vegan equivalent - Nurishh Gran Vegiano in our house) and serve.

Sometimes skip the wine, sometimes add chilli flakes.

Cut some raw beetroot into very thin matchsticks with thinly sliced pear and feta cheese with some chopped mint leaves.

Also nice is:

Pineapple chunks with brown sugar and chopped mint leaves on top.

As is:

Linguine, prawns, parsley, butter, garlic, chilli, white wine

I actually have this one, the Cat & Dog hair version as we have a Retriever that seems to hate having hair. This is possibly the most validation I’ve ever felt from a post on here. Holding back tears, tbh.

Adapted this the other day, using normal milk and without the potatoes. Served with a full ciabatta and shit loads of butter. Properly delicious.

Can anyone recommend some good veg cookbooks but not where they try to substitute meat for mushrooms or tofu? Just using spices and herbs to make the veg interesting?

Green Roasting Tin is pretty good. I cook a few recipes out of that regularly.

Also Ottolenghi veggie recipes are great.

Make sure to only add the cream at the end as the dish comes off the heat, ie don’t overheat it
