Picked up a 20oz (0.7kg) steak for half price earlier today and just smashed it. Think I’m going to need a lie down

Had that in Bordeaux in the summer, amazing butchers selling steaks 16” long and 6” wide. Cooking it in butter, garlic, herbs and nearly choking on it but loving every minute

How did you cook it then?
After resting at room temperature for half a hour, cut the steak in half (too big for one pan).
Dry with a paper towel, enough salt and pepper to kill a bull rubbed in, then brushed with olive oil.
Get pans screaming hot and put steaks in.
Turn every 90 secs but otherwise don’t prod or poke them.
After 3 flips of the steaks, add some butter and crushed garlic cloves.
At the end chuck in some fresh oregano for the last minute.
Total cook time about 5 mins for medium rare. These were about an inch and half thick.
Sounds good. I was asking as you Brits are known for overcooking everything down here.
I’d put the pepper on at the very last minute as pepper is not meant to be cooked as various famous chefs say.
I haven’t had a good steak in months. I don’t eat that much meat at home any more.
It was nice and purple in the middle and tasted amazing but I ate about 500g worth and was definitely getting meat shakes by the end.
Yeah the pepper can burn at high temps. Personally I only salt a steak. Bone apple tea
